CREATING EXCLUSIVE CHOCOLATES WITH THE WORLD'S BEST CHOCOLATIER

Alimara University Hotel's actions do not stop!

On this occasion, to exemplify the synergies between the Hotel Alimara and the CETT-UB, we have counted with the collaboration of Lluc Crusellaschampion in 2022 of the World Chocolate Master, the most prestigious award in the world of chocolate and considered one of the best master chocolatiers in the world.

The challenge was to create a limited edition of chocolates that integrated the values of Hotel Alimara. To carry it out, a joint activity was organized with Makeat BCN and Lluc Crusellas for the students of the Higher Diploma of Gastronomic Pastry at CETT-UB to design and make a bonbon that would be offered later as a small "petit four" to the customers of the Summum Restaurant restaurant of the hotel. In this way, educational experiences are created in the classroom coupled with real projects that end up having a positive impact on the customers of the hotel Alimara.

In order for the students to carry out the challenge with guarantees of synthesizing the values of Alimara in a chocolate, Maria Texidor, the commercial director, explained the new hotel brand, its mission and vision and the new manifesto. The students also had to integrate the hotel's new graphic style, which is warmer than the previous one. With these tools, the students had to design proposals that reflected the new stage of Hotel Alimara.

The students were divided into two groups and during two days they designed two proposals of chocolates that were finally presented in front of an expert jury made up of Lluc Crusellas, expert chocolatier, Maria Texidor, commercial director of Hotel Alimara, Xavier Llavià, head chef of Hotel Alimara and Gemma Díez, coordinator of the training at CETT-UB. The jury valued aspects such as technique, texture, preservation, integration of the "Alimara Concept", visual aspect and taste.

Finally, the jury decided to produce one proposal from each group, one based on the concept of the day and one based on the concept of the night, which perfectly represent the wide range of experiences that you can live during a day in Barcelona staying at the Hotel Alimara.

Proposal 1, from the group integrated by Mª Consuelo Bádenas, Marisol Calderón and Leny Erika Escobar is called "Mango Passion", representing the day and is a mango, passion fruit and matcha tea bonbon. Proposal 2, from the group integrated by Arnal Solans, Sara Gallardo, Paula Cardero and Joana Xia Camprubí was called "Night" and is a raspberry and chocolate ganache bonbon.

In total, a limited edition of 70 units has been produced, which will be available for tasting over the next few days as a gift when dining at our Summum Restaurant during lunchtime*.
